Recently I discovered and tried the 2-ingredient “PB” substitute cookies found here on this blog. However, what’s a gal to do when craving a batch of these delightful cookies, yet out of dates in the middle of an ice storm? Yup. Search for info on equivalent ingredients. Figs to the rescue!
But how do figs differ from dates? Figs (at least the ones I have on hand) are a bit larger so using 1 less is volume wise about the same binding capacity as the dates served in the original recipe. Also, figs have more fiber and less sugar. I considered adding 1 tsp on molasses. Like dates, both figs and dates need soaking in hot water to create the binding capabilities we’re looking for in this recipe.
INGREDIENTS:
8 soaked figs
1/2 cup sesame seeds
METHOD:
Blend, bake for 10-15 minutes at 350. Cool. Enjoy.
