Hemp Milk (vegan)

Useful for a beverage, a baking/cooking ingredient, or as a frozen dessert with the texture of ice milk unless you also add a fat.

Recently I came across a blog post written about one way to make Hemp Heart Milk. I thought the nutritional info and distinction about nut vs hem heart milk was intriguing but knew it wasn’t quite right for me as it was written so I decided to try my own twist on it. I’m especially interested if the hemp milk might be able to be made into ice cream as a coconut-alternative to non-dairy, non-soy, milk (as a baking ingredient) and non-dairy ice cream base.

INGREDIENTS:

  • 4 Cups Water
  • 3/4 Cup Hemp Hearts
  • 4 TBSP Maple Syrup (Keto Option: use any maple or syrup flavored sweetener instead)
  • (3 scoops Kal stevia)
  • 1/4 Cup Cocoa Powder (omit for creamcycle or chia flavors)
  • 2 drop YL Peppermint (or Tangerine for creamcycle flavor, or cinnamon/clove/nutmeg for chia) Vitality Oil

INSTRUCTIONS:

Blend all of the above ingredients together into a slurry. Taste and adjust sweetener or peppermint oil, as needed. Enjoy as a tasty beverage or freeze in ice pop molds and/or an ice cream maker.

RESULTS:

This recipe works with 1/2 cup hemp hearts, the same amount of water, 2 TBSP maple syrup, straight up as a milk you can drink. The basic recipe is definitely worth your time and ingredients to tweak to your likely. Since this “milk” has no preservatives in it, the parts settle while it is stored in the fridge so if you will be drinking it, remember to shake well, before using in a baking recipe or enjoying as you would use milk.

This recipe also works as stated above for chocolate milk. The entire recipe is sized correctly, yield wise, for a recycled Oat Milk 1.5 Quart recycled container to store it in the fridge. I am going to also trial this milk as a base for ice cream. I’ll post more later on that topic. If you get the portions just right, this may make a base for coffee style creamer, flavored, or not.

Creme de Menthe

this recipe is a lower carb option on a classic. there is even an option for an alcohol-free alternative

INGREDIENTS:

  • 2 cups vodka (or for alcohol-free version use 2 cups of simple keto syrup)
  • 1 1/2 cups fresh mint leaves (or skip the “infusion” step all together and instead use a drop or two of Young Living Vitality Peppermint oil.
  • 1 cup water
  • 1 cup granulated sugar substitute
  • 3 to 5 drops green food coloring (optional)

METHOD:

  1. In a one-quart jar, infuse mint leave in vodka. Allow to infuse for a few days at room temperature. NOTE: If you desire to make the alcohol free version, steep the mint leaves as you would make tea, in 3 cups of water.
  2. Make simple syrup by boiling water and adding sweetener.
  3. Combine simple syrup and well strained mint infusion. (Toss mint)
  4. Bottle (add green food coloring if desired)

Serving Suggestions:

  • Over Ice Cream
  • In cocktails
  • Grasshoppers (recipe posting soon)

Simple Keto Syrup

use allulose for this recipe. why? because some other types of keto-friendly syrups harden or crystalize after cooling and won’t meet our needs.

INGREDIENTS:

  • 1 cup water
  • 1 cup allulose

METHOD:

Combine ingredients together, bring to boil, simmer for 5 minutes. Cool.

POM Lemonade

a healthy, refreshing drink

INGREDIENTS:

  • 1 ounce POM Juice
  • 1 ounce Now Raspberry Flavored Liquid Minerals
  • 1 ounce lemon juice (fresh squeezed or bottled)
  • Water
  • Ice
  • Sweetener of choice, to taste

INSTRUCTIONS:

  1. Measure one ounce each of POM Juice, Now Minerals, and lemon juice into your glass.
  2. Add your favorite sweetener, stir, to taste. (Suggested sweeteners may include one or more of the following: Stevia, Erytherol, Sugar, Honey, or a keto-friendly low carb blend).
  3. Fill the cup with water and ice.
  4. ENJOY!

Simple, Healthy, Easy, Refreshing, may even restore electrolytes or minerals.

TIPS:

Pumpkin Latte

This is a copycat recipe of so many coffee shop versions. Now you can make it at home and be in control of which ingredients work best for you.  This beverage can be enjoyed hot or cold.

Ingredients

  • 16 ounces coffee (hot or cold)
  • 1 TBS pumpkin puree, organic
  • 1 TBS maple syrup (or sweetener of choice for sugar-free)
  • 1 TBS coconut milk (dairy-free option)
  • 1/8 tsp ground cinnamon
  • 1/8 tsp ground ginger
  • 1/8 tap ground nutmeg

Mix. Enjoy. Optional: top with whipped cream or whipped coconut cream.

Options:
Sugar: Use Maple Syrup
Sugar-Free: Use sweetener of choice
Dairy: Option: Use Heavy Cream or 1/2 and 1/2 in place of coconut milk and whipped topping.
Dairy  Free: Make with coconut milk and whipped coconut cream.
Soy-Free: Check base ingredients before using for soy-free ingredients.
This recipe is naturally free of nightshades.

Probiotic Fruit Drink

 

One of the blogs I like to follow is Primally Inspired because Kelly is upbeat and shares a lot of great recipes and ideas.  This video highlights one of them–her yummy, easy to make, fermented probiotic fruit drink.  She happens to use strawberries but other fruits are equally delicious.  Give your favorite a try.  One of the great things about this drink is there aren’t any strange chemicals or bugs making it red, and there isn’t any high fructose corn syrup.
