V8-Style Juice (Nightshade Free)

Sometimes referred to as “no mato” juice because this version is similar to the traditional version sold in the stores, however, it is created for those who have sensitivities to nightshades, or cook for them.

INGREDIENTS:

  • 3 stalks celery
  • 4 “juicing sized” carrots
  • 1 beet root
  • 1 cup spinach (kale, swiss chard)
  • 1 cucumber
  • 1 bunch organic parsley
  • 1/2 red onion
  • 1 lime
  • Optional: Top with a pinch of black pepper and celery salt if you are going to drink it.

INSTRUCTIONS:

  1. Peel lime.
  2. Wash and chop the veggies.
  3. Push thru your juicer.
  4. Enjoy!

This recipe can be enjoyed as is, as a base for a drink, or can be used in recipes calling for the use of V8 juice in the recipe (like my chili). However, this sauce turns dark brown when cooked or heated due to the presence of the beet root.

YIELD: This recipe makes about 2 cups worth, volume wise, of No-Mato V8 Juice. However, since the size of various veggies can vary a lot, it is hard to predict with absolute accuracy the volume of juice which will be produced.
